Vegan Alfredo

Here's a great vegan version of a thick alfredo style sauce that tastes as close to the real thing as you can get.



Vegan Alfredo

2 cups baby portobello mushroom (quartered)
1 cup unsweetened soymilk
1/2 cup cashews
1/2 block firm or extra firm tofu
2 Tbs olive oil
2 cloves garlic
8 oz whole wheat fettucine or linguine (1/2 bag or box)
salt and black pepper to taste

In a food processor, blend soymilk, tofu, nuts, olive oil, and garlic until it reaches the consistency of a thick sauce (it will thicken more as it cooks and small pieces of nut are okay, they will resemble grated cheese). Saute mushrooms with salt, pepper, and a small dash of oil over medium heat until soft. Turn heat down to low and pour sauce over mushrooms. Cover and allow sauce to heat until hot, about 10 minutes. Combine with cooked pasta. Enjoy!

Tip- Alternatively, you can replace the mushrooms with spinach, broccoli, or anything else you can think up!

  1. That sounds wicked tasty Ed, despite having eaten breakfast 10 minutes ago I'm already getting hungry again reading your recipe! On the topic of pasta, do you know off hand if most pastas are vegan? I assume that 'egg noodles' have egg in them, but what about just a regular pasta not labelled as having eggs? We've been trying to buy more whole wheat pastas lately, but still sometimes buy the regular stuff. I never look at the ingredients listed on pasta when I buy it, maybe I should.

  2. Yes, you are correct in the assumption that most pastas are vegan. Every now and then I come across one that contains egg ingredients, but for the most part pastas usually contain only flour and water. When in doubt, definitely check out the label!

    I love Alfredo... I am not vegan, but lacto-vegetarian. But I have read mixed comments stating that Fettucine pasta contains egg. Is that true?

  5. I have found plenty of whole wheat fettucine pasta that does not contain eggs. Just check out the ingredients list, usually dried pastas only contain flour and sometimes water. If there is egg, they'll definitely tell you. Also, feel free to use any pasta with this recipe.
