Sunday morning breffy. Vegan Crepes!
MMM yes! Vegan crepes. Delicious and the perfect weekend breakfast. Not only are they quick and easy to make, but they look extremely fancy and will make you the king and/or queen of the household. Behold!
Vegan Crepes
1 C whole wheat pastry flour
2 TBS ground flax seeds
2 TBS sugar
1 tsp baking powder
dash of salt
2 TBS canola oil
1.5 C soymilk
In a bowl, combine the flour, flax, sugar, baking powder, and salt. Mix to combine. Then, add the oil and soymilk. Use a whisk, or fork to thoroughly combine, getting out as many lumps as possible. I HIGHLY recommend using a nonstick pan for this and putting it over med-high heat. After pan is hot and batter has set for several minutes. Scoop about 1/4 C of batter into the center of the pan and use the handle to swirl the batter out into a wide, thin circle. Put back on burner until any wet spots are gone and flip by peeling up an edge with your fingers (be careful!) or use a fork to help. Cook opposite side for about 30 seconds and remove from pan, placing on a towel-lined plate. This will help suck up any moisture that may accumulate. Allow to sit for at least 2 minutes before attempting to fill, this will prevent rippage.
Filling
3 TBS Vegan Cream Cheese
3 TBS soymilk
2 TBS sliced almonds
2 TBS dried clack currants
1 TBS sugar
Mix above ingredients in a small bowl until smooth. Alternately, you may use jam, fresh fruit, or any other delicious filling you can dream of. Put a 1 TBS dollop into the middle of the cooled crepe and turn in each of the four sides and then roll up!
This recipe seems rather complicated, but in fact, is quite simple. I encourage you to try it. Drizzle with a little agave nectar and powdered sugar and then suddenly you've become a French pastry chef!! I will most likely put up a video of this shortly on my youtube page to show you the cooking process.

I just made your vegan crepes this morning and I have to say that they were so good. And they were also really easy to make. I've tried other recipes, but they all pretty much sucked. Next time I make these, I will post them on my blog. Thanks for the recipe.
ReplyDeleteEd - by far the best crepe recipe I've ever tried. Great flavor and texture, and pretty easy to make too. Grechen (my fiancee) loved them as well.
ReplyDeleteOnly problem I had was the heat - I had to do mine closer to medium than medium-high, as you suggested, to keep from burning the crepes. I have one of those ceramic electric tops, maybe it just heats too much. Otherwise, perfect recipe that I'll use over and over again!
