Yes, that's right.  Veganism is not a new idea and as the video explains, the term and ideology were coined in 1944.  Check out this fascinating piece that aired back in 1976 on the BBC. Even more interesting...  read the first "Vegan News" magazine from 1944 , which coins the term "vegan."  It was written on a typewriter and the logo is hand-drawn! Vegan Treats!

Although I have heard many tales about the infamous vegan bakery called, Vegan Treats , I have never actually visited the place. Why not? What was stopping me? They are only a mere 50 miles from Philadelphia. So, I decided it was time to drop in. Was I glad I did!! ;) This place is like a vegan paradise. Tofu has also gotten a bit of a bad rap from the "scientific" community as well. Recently, many so-called "studies" have claimed that "soy" is responsible many health ailments. Why soy? Why not pinto, or kidney, or black, or garbanzo? Why do we focus in on this innocent bean? I am sure it has something to do with it being an excellent replacement for meat. In fact, aside from being a complete protein, just like

Chickpea Salad

This delicious chickpea salad could definitely replace chicken salad any day! The bitterness of the kale matched with the familiar taste of the vegan mayo makes this a snack anyone will enjoy, vegan or not. 3 cups cooked chickpeas 1/2 cup shredded kale or celery 1/4 cup vegan mayo (more or less depending on taste) 1 TBS lemon juice salt and pepper to taste Pulse all ingredients in a food processor until the consistency of chicken salad. Yum.
