It's been a while. A quick cookie recipe!
It's been a while since I've done a recipe posting. Here's a quick and easy cookie recipe that has all of the familiar flavors of the season!
Chocolate Gingerbread Cookies
1 TBS ground flax seeds
1/2 C canola oil
2/3 C sugar
1/4 C soymilk
1/4 C molasses
1 1/4 C whole wheat pastry flour
1/4 C cocoa powder
1 tsp baking soda
2 tsp ground ginger
1 tsp ground cinnamon
1 tsp ground cloves
In a large bowl whip together the flax seeds, canola oil, sugar, soymilk, and molasses until thick and creamy. Add dry ingredients and stir to combine. Scoop out 2 TBS for each cookie onto a parchment-lined baking sheet and cook for 10-12 minutes in a 350 degree oven. Allow to cool for at least 5 minutes before removing from baking sheet. Makes about 12 cookies.

These look great. But where is the chocolate?
