  2. Ed, that looks like an awesome Thanksgiving dinner right there. I notice that there is pumpkin in the mix in the before picture. How do you prepare pumpkin? We've still got left over pumpkins from Halloween (uncarved). I would really like to eat them instead of throwing them away. Do you have any good recommendations for pumpkin recipes, or methods for at least preparing the seeds to munch on?

  3. The pumpkin was actually in the pumpkin quinoa, stuffed inside the carnival squash. If you have a ton of left over pumpkins, try cooking them in the oven all at once. Just cut them into halves, or smaller depending on size and scoop out the seeds. Then cover them with foil and cook at 350 degrees until really soft. I let them cool and then place them into the food processor to make a puree, then you can freeze it for later use. You can prepare the seeds by seperating them from most of the stringy pulp, tossing with some salt, and throwing them into a 350 degree oven until slightly browed. Keep an eye on them because they tend to burn rather quickly.
